Last night I really, really fancied a piece of cake for supper. I haven't any cake in the house at present so whipped up a ginger cake out of the storecupboard bits and bobs.

Here is the recipe:
5oz eggs, 5oz self raising flour, 5oz demerara sugar, 5oz baking fat (I use Stork for baking), small amount of ginger flavouring and a few pieces of crystallised ginger. Beat fat and sugar together, add eggs and flour, then flavouring and ginger pieces, chopped of too big. Line an 8 inch tin and add mixture (I used greaseproof paper as I have loads at the moment, but you could also just grease the tin well). Put in a preheated oven at 190 degrees for 20 to 30 minutes, depending on the ferocity of your oven!
